To made this pie even better, I use ground up Chips Ahoy... But don't get me wrong, the ice cream is the star in this recipe with the bites of peanut butter and chocolate. For this ice cream pie, you can go absolutely crazy with this recipe. Use any of your favorite ice cream flavors, layer them up, and top the pie with all of your favorite toppings. You can also use different flavors of Chips Ahoy or other crunch cookies. And the crust is only baked for 5-10 minutes, which totally saves your house from getting too warm in these summer months. This is a perfect recipe to make, keep in your freezer, and pull it out whenever you need a fun and convenient dessert to help cool you and your family off. Then pour half the ganache over the ice cream layer and spread with the back of a large spoon. Next, sprinkle half the chopped chocolate chip cookies. Repeat these steps with another layer of ice cream, the rest of the ganache, and the rest of the chopped cookies. Place in the freezer until fully set, then cover with plastic wraps and/or aluminum foil. When ready to serve, use a heated knife or a knife dipped in hot water (then dried with a towel) to cut slices of the pie.

The most time-consuming dessert I made for Thanksgiving this year, easily the most decadent, and certainly the one that got the most attention (several of them vanished before the meal was served!) This is a layer of fudgy brownie with cocoa nibs, covered in a layer of peanut butter fudge, then a layer of salted caramel, then a layer of dark chocolate ganache. The recipe(s) is (are) entirely my own, either things I’m working on (like the brownie; trying to work out a good ratio-a-la-Ruhlman) or things that have been in my go-to stable for a while (the caramel and ganache). Photo-wise, this was shot in the morning light on Thanksgiving, on my front porch. I thought the close-up framing and the square crop complemented the shape and arrangement of the brownie, and emphasize the decadence a bit (not that it needs that much help). Read about this dinner on my blog. 4th Course: "Le Kit Cat" Layer of cocoa powder-dusted chocolate mousse over a layer of chocolate and peanut butter "feuillentine" made with corn flakes. Sauced with hazelnut caramel. Paired with Elyse Winery Red Zinfandel Notes. Damn. A dessert like t his is so simple and yet so pleasing. Kit Kats are one of my all-time favorite treats - love the wafer, love the chocolate. Here, Michel Richard elevates the humble bar to a fine dining setting. The base is like a feuillantine in texture, but in reality a mixture of chocolate, peanut butter and cornflakes! The top layer is a light chocolate mousse dusted with cocoa powder. The sauce is a hazelnut caramel - although it was a little more loose than a caramel is usually. Didn't get the hazelnut so much. The wine pairing, a Red Zinfandel, was spectacular with the chocolate. If anything, it really brought out the peanut butter in the bottom layer... the peanut-yness...
